Brown Crabmeat
This comes from the main body of the crab; it can vary in colour and texture, due the season or simply from the male (cocks) or female (hens) crabs
The colour again can vary from a light creamy brown to a vibrant orange or reddish, it has a very rich and deep flavour
Purse Crabmeat
White cooking grade ideal for food manufacturers/producers.
The purse is meat which is machine recovered from the crab purse after being hand picked. There are lots of nooks and crannies in the purse where the white meat cannot be economically removed by hand, so the purse is broken up and the meat separated from the shell by a kind of centrifuge.
This does break up the meat fibres slightly, and also slight remnants of brown meat on the purse gives the meat a light creamy colour.
